Fried provolone sticks with spicy red sauce

Provolone Soresina

The original mild and delicious stretched-curd cheese.

INGREDIENTS

2 packages Provolone Soresina
2 eggs 
120 g breadcrumbs 
300 g tomato puree
1 tablespoon extra virgin olive oil
1 fresh chilli pepper
Salt 
Parsley
vegetable oil for frying, as needed

PREPARATION

1 Cut the provolone into vertical slices about 2 cm wide.

2 Beat the eggs and submerge each provolone stick well, then roll in the breadcrumbs making sure it is breaded and repeat these two operations a second time for each stick. Place the breaded sticks on a plate and store in the refrigerator, even better if in the freezer, for 15 minutes.

3 Prepare the sauce: heat the oil and pour in the tomato puree, add salt and some fresh chilli pepper slices. Bring to a boil until the sauce reduces. Set aside.

4 Heat the vegetable oil in a not too large saucepan until, when a toothpick is inserted, many tiny bubbles immediately form on the wood: insert two pieces of breaded provolone cheese at a time in the oil and cook about 3 minutes, turning the sticks very gently so that they become an even golden brown. Drain them with a slotted spoon and place them on a plate lined with paper towels.

5 Salt the sticks, arrange them on a serving dish with a small bowl of warm hot sauce and serve garnished with fresh parsley leaves.
