6 medium eggs
120 gr of sugar
500 gr of Soresina Mascarpone
Cocoa powder to taste
Bitter chocolate in flakes to cover the tiramisu
350 gr sponge finger biscuits
- Divide the egg whites from the yolks, add half the sugar to the yolks and whip with one until you get a nice clear, frothy and creamy mixture.
- Add the mascarpone cheese. Prepare the egg whites: whip them, and once they are whipped, add the other half of the sugar in a sprinkling and continue to whip them.
- Now add them to the egg yolk, sugar and mascarpone cheese mixture. In order not to remove the egg whites, turn the mixture from top to bottom with a spoon. Place the cream on the bottom of the small glasses, soak the sponge finger biscuits in the coffee quickly, place them in the small glass making layers, two or three at will, spreading the cream between one layer and the other.
- Add the bitter cocoa powder on top of everything and if you want the bitter chocolate flakes.
