Gorgonzola Soresina PDO is produced with only the good milk of our farming members’ cows, a natural and wholesome soft cheese that stands out for its incredible creaminess. Naturally lactose-free, it is available in different versions and ageing levels to satisfy even the most demanding palates. Mild Gorgonzola, for those looking for an intense yet never overpowering flavour, Sharp Gorgonzola, with its strong, blue-veined taste, or our Creamed version, an exceptional superior-quality gorgonzola. Gorgonzola Soresina is a raw cheese with a unique taste. Distinguishing features? Straw-white colour and green speckling due to the blue-cheese processing. Of ancient origin, Gorgonzola Soresina is made only with milk from our cows and processed in our dairies which fall within the production and ageing area according to the protected designation of origin.
But why is Gorgonzola Soresina so good? After adding milk enzymes, yeast, penicillium and rennet to our milk, the masterful hands of our cheesemakers proceed to cut the curd and fill the moulds by hand, obtaining a soft and very creamy product. In the hours that follow, the wheels are turned by hand and marked on both sides with the Consortium’s guarantee mark. This is how a wholesome product is created that is rich in taste and made in full respect of the environment according to a controlled and guaranteed supply chain, from the milk to your table.
Creamed Gorgonzola Soresina is a variety of our Mild Gorgonzola created with an exclusive formulation that gives it an extraordinary creaminess and unique flavour. Produced only with milk from our cows in our own supply chain dairies, its soft texture has a delicate, slightly sharp flavour with herbaceous hints. Very versatile, it is delicious in both savoury and sweet recipes.
